Opal is an ore with a seashell sheen. In the game’s words it is “a valuable ore that gives off a mesmerizing iridescence similar to the inside of a seashell. It contains the power of water.” It does nothing in a cooking pot; what it is for is upgrading armor, and the armor wants a lot of it. This page covers where it comes from in The Legend of Zelda: Tears of the Kingdom, which monsters drop it, and what the upgrades cost.

Where does Opal come from?

Two sources: ore deposits, and the Talus family. What a deposit gives is random and Opal is only one of the ores in it, so monsters are the steadier supply.

The table lists the monsters that drop Opal, best chance first. The chance is for Opal on one roll of that monster’s drop table.

Monster HP Chance per drop roll
Frost Talus 1000 74%
Igneo Talus 1000 55%
Stone Talus (Luminous) 620 30%
Stone Talus (Rare) 1080 24%
Stone Pebblit 20 10%
Stone Talus 380 10%
Battle Talus 380 10%

Frost and Igneo Taluses are far ahead of the rest, which makes them the ones to farm; Stone Talus locations shows where they are. The fight is the same for all of them: climb on and hit the ore deposit.
